Reserve your share online with a deposit of just $1997.

Pay the remaining balance in addition to the deposit (approximately $3300 - $6000) when your beef is ready. The expected wait is typically 3-8 weeks. You will be provided an estimated timeline after your deposit.

Our cattle are raised on the rolling pastures of western North Carolina foothills where they are provided a constant supply of fresh, high-quality "salad" to produce delicious and nutritious beef.

After slaughter, we hang our beef using a method called "tenderstretch", which achieves the tenderness of long aged beef without high levels of moisture and trim loss associated with long aged beef.

Your whole beef share includes something like the following, subject to your specific cut selections:

  • 25% steaks such as Sirloins, New York Strips, Ribeyes, and Tenderloins
  • 35% savory cuts such as Chuck Roasts, Top Round Roasts, and Short Ribs
  • 40% premium ground beef in 1 pound packs
  • Knuckles and other premium soup bones

Deposit:

Your deposit for a whole beef share is just $1997. This is a non-refundable deposit. Your deposit is your purchase of a whole live cattle. Your remaining balance in addition to the deposit (estimated around $3300 based on an average of 400 lbs of beef) will be calculated once the beef is processed.

This final amount and the corresponding pounds of beef can vary. This is not a fixed package size. Your beef weight and actual cost is based on the actual carcass weight of the animal you own a share of.

How it works:

You reserve your share with a deposit online. We go to the pasture, select the healthiest, fattest cattle available and then butcher it with old-world craft and care in our shop. Once ready and the final payment is made, you can pick up or have us ship your excellent beef. We won't leave you stranded after the purchase - you're part of the family now! Packaging:

All cuts are vacuum sealed and labeled.

Freezer space:

General rule of thumb: you need approximately 1 cubic foot of freezer space for each 30-40 pounds of frozen meat. For a whole share, plan for approximately 13-16 cu. ft. You'll want a dedicated chest or upright freezer.
